Why you’ll love this recipe

Three main ingredients and five minutes of work give you a big batch of shredded chicken that turns into several different meals. It is one of the cheapest ways to keep protein ready in the fridge.

  • Hands-off — load the crock and walk away.
  • Meal-prep friendly — tacos one night, burrito bowls and salads after that.
  • Budget-friendly — chicken breasts and a jar of salsa.

Slow cooker size and timing

A 4- to 6-quart slow cooker is the right size for 2 pounds of chicken. In a much larger cooker the chicken sits in a shallow layer of salsa and can cook faster and dry out; in a smaller one the pieces stack and cook unevenly. Slow cookers also vary — newer models often run hotter than older ones — so treat the times as a range and confirm with a thermometer. The chicken is ready when the thickest piece reads 165°F (74°C) and pulls apart easily with a fork.

Instructions

Tap a step number to mark it done.

  1. Step 1: Load the slow cooker

Spread half the salsa over the bottom of the slow cooker. Lay the chicken breasts on top in a single layer, sprinkle with the taco seasoning and cumin, and cover with the rest of the salsa.

  2. Step 2: Cook low and slow

Cover and cook on LOW for 4–5 hours or HIGH for 2½–3 hours, until the chicken shreds easily and the thickest piece reads 165°F (74°C) on an instant-read thermometer.

Tip: Start checking at the low end of the time range. Chicken breast is lean and turns dry and stringy if it cooks much past tender.

  3. Step 3: Shred the chicken

Transfer the chicken to a cutting board and shred it with two forks.

  4. Step 4: Return to the sauce

Return the shredded chicken to the slow cooker and stir it into the salsa juices. Add the lime juice and cilantro, then taste and add salt if needed. Let it sit on WARM for 10 minutes so the chicken soaks up the sauce.

  5. Step 5: Serve

Use a slotted spoon to fill tacos, burritos, rice bowls or salads, and add your favorite toppings.

Tips for the best results

  • Use thawed chicken only. USDA advises against putting frozen meat in a slow cooker because it can sit too long in the temperature danger zone.
  • The salsa you choose is the main flavor, so pick one you like straight from the jar.
  • For crisp edges, spread shredded chicken on a sheet pan and broil 3–4 minutes before serving.

Storage, reheating and freezing

Refrigerator
Refrigerate within 2 hours in an airtight container with some of the juices for 3–4 days.
Reheating
Reheat with a splash of the salsa juices in a covered skillet or the microwave until it reaches 165°F (74°C).
Freezing
Freezes well. Portion with some juices into freezer bags and freeze up to 3 months; thaw overnight in the fridge.

Frequently asked questions

How long does salsa chicken take in the crockpot?

About 4–5 hours on LOW or 2½–3 hours on HIGH for 2 pounds of boneless breasts. It is done at 165°F (74°C) and when it shreds easily.

Do I need to add liquid?

No. The salsa and the chicken release plenty of liquid. Adding broth makes the filling watery.

Can I put frozen chicken in the slow cooker?

USDA recommends thawing meat first so it moves quickly through the 40–140°F danger zone. Thaw frozen chicken in the refrigerator overnight.
