Why you’ll love this recipe
These Brussels sprouts get dark, caramelized edges and crispy loose leaves while the centers turn tender. A little lemon and Parmesan at the end makes them taste bright instead of heavy.
- One sheet pan and a handful of pantry ingredients.
- Holiday-ready — they roast while the turkey or ham rests.
- Naturally gluten-free and easy to make dairy-free.
Why cut-side down on a hot pan
Browning happens where food touches hot metal. Placing each half flat side down on a preheated pan gives the most contact, so the cut surface caramelizes quickly before the sprout overcooks and turns mushy. Resist the urge to stir during the first 15 minutes. Leave space between pieces, too; crowded sprouts trap steam and end up soft and gray rather than golden. The garlic goes in late so it toasts without burning.
Ingredient substitutions
| Instead of | You can use |

| Parmesan | Crumbled feta or toasted chopped pecans, or skip the cheese to keep it dairy-free. |
| Lemon | A splash of balsamic vinegar or sherry vinegar. |
| Garlic | Add 4 slices of chopped bacon to the pan at the start of roasting for a smoky version. |

Instructions

-
Step 1: Heat the oven
Place a rack in the lower third of the oven and heat it to 425°F (220°C). For extra crispness, put the empty sheet pan in the oven while it heats.
-
Step 2: Prep the sprouts
Trim the dry stem ends, pull off any yellow outer leaves and cut each sprout in half through the stem. Quarter any very large ones so the pieces are similar in size. Pat dry if they were rinsed.
-
Step 3: Season
In a large bowl, toss the sprouts with the olive oil, salt and pepper until well coated. Save any loose leaves; they roast into crispy chips.
-
Step 4: Roast cut-side down
Spread the sprouts on the hot sheet pan and turn them cut-side down in a single layer with space between them. Roast 15 minutes without stirring, until the undersides are deeply browned.
Tip: Crowding is the main cause of soggy sprouts. If they do not fit in one layer with room to spare, use two pans.
-
Step 5: Add the garlic
Scatter the garlic over the pan, toss and roast 5–10 minutes more, until the sprouts are tender when pierced with a knife and the edges are crisp and dark.
-
Step 6: Finish and serve
Toss the hot sprouts with the lemon zest, a squeeze of lemon juice, the Parmesan and a pinch of red pepper flakes. Taste for salt and serve with lemon wedges.

Tips for the best results
- Choose small to medium sprouts that feel firm and heavy with tight leaves. Very large sprouts can taste more bitter.
- Dry the sprouts well after washing. Surface water steams them instead of browning them.
- For a sweet finish, drizzle with 1 tablespoon of balsamic glaze or honey right out of the oven.
Storage, reheating and freezing
- Refrigerator
- Refrigerate within 2 hours in an airtight container for 3–4 days.
- Reheating
- Reheat on a sheet pan at 400°F (200°C) for 5–8 minutes or in an air fryer at 375°F (190°C) for 3–4 minutes to bring back some crispness.
- Freezing
- Not recommended. Roasted sprouts turn soft and watery after freezing and thawing.
Frequently asked questions
How do I make Brussels sprouts less bitter?
High-heat roasting is the best fix. Browning creates sweet, nutty flavors that balance the natural bitterness, and a little lemon, Parmesan or balsamic finishes the job.
Can I roast frozen Brussels sprouts?
Yes, roast them straight from frozen at 425°F (220°C) for 25–35 minutes. They will be softer and not as crisp as fresh.
Can I prep them ahead?
Trim and halve the sprouts up to 2 days ahead and refrigerate them in a bag lined with a paper towel. Roast just before serving.
