Why you’ll love this recipe
American strawberry shortcake is built on a rich, slightly sweet biscuit rather than sponge cake. The tender crumb soaks up the strawberry juices while the crisp, sugared top keeps a little crunch.
- Three simple parts you can make ahead separately.
- Ready in about an hour, including the berries.
- Perfect for peak strawberry season in spring and early summer.
Why macerating the berries matters
Tossing sliced strawberries with sugar draws out their juice and creates a light, natural syrup in about 30 minutes, no cooking required. That syrup is what soaks into the biscuit and makes shortcake taste like shortcake. Taste your berries first; very sweet, ripe strawberries may only need 2 to 3 tablespoons of sugar, while tart early-season berries can take the full ¼ cup. Spoon plenty of juice over each biscuit bottom when you assemble.
Ingredient substitutions
| Instead of | You can use |
|---|---|
| Whole milk | Buttermilk or half-and-half; buttermilk gives a slightly tangier biscuit. |
| Strawberries | Mixed berries or sliced ripe peaches in the same amount. |
| Homemade biscuits | Store-bought pound cake or angel food cake slices for a no-bake shortcut. |

Step 1: Sugar the strawberries
Toss the sliced strawberries with ¼ cup sugar in a bowl. Let them stand at room temperature, stirring once or twice, until juicy, about 30 minutes while you make the biscuits.
-
Step 2: Cut in the butter
Heat the oven to 425°F (220°C) and line a rimmed sheet pan with parchment. In a large bowl, whisk the flour, sugar, baking powder and salt. Cut or rub in the cold butter until most pieces are pea-sized.
Tip: Keep the butter cold. Visible flecks of butter create steam pockets in the oven, which is what makes biscuits flaky and tall.
-
Step 3: Mix the dough
Whisk the milk, egg and vanilla together and pour over the flour mixture. Stir with a fork just until a shaggy dough forms; a few dry bits are fine.
-
Step 4: Shape and cut
Turn the dough onto a lightly floured surface, pat it into a 1-inch-thick round and cut 2½-inch biscuits, pressing straight down without twisting. Gently press the scraps together to cut the rest, for 8 biscuits total.
-
Step 5: Bake
Place the biscuits on the sheet pan, brush the tops with milk and sprinkle with coarse sugar. Bake 12–15 minutes, until tall and golden brown. Cool on a rack at least 10 minutes.
-
Step 6: Whip the cream and assemble
Beat the cold cream, powdered sugar and vanilla to soft peaks. Split each biscuit, spoon strawberries and their juice over the bottom half, add whipped cream and cover with the top. Serve right away.

Tips for the best results
- Do not overwork the dough. Stir just until it comes together so the biscuits stay tender.
- Press the cutter straight down without twisting. Twisting seals the edges and keeps the biscuits from rising evenly.
- Assemble just before serving. Filled shortcakes get soggy within an hour.
Storage, reheating and freezing
- Refrigerator
- Store biscuits airtight at room temperature for up to 2 days. Refrigerate sugared berries and whipped cream separately, covered, for up to 2 days.
- Reheating
- Warm biscuits in a 350°F oven for 5 minutes to refresh them before assembling.
- Freezing
- Freeze baked biscuits or unbaked cut biscuits for up to 3 months; bake unbaked ones from frozen, adding 3–5 minutes. Freezing assembled shortcakes or sugared berries is not recommended.
Frequently asked questions
Can I make strawberry shortcake ahead of time?
Yes, in parts. Bake the biscuits up to a day ahead, sugar the berries a few hours ahead and whip the cream up to 4 hours ahead. Assemble just before serving.
Can I use frozen strawberries?
Thawed frozen berries work for the sauce but are softer and juicier. Fresh, ripe berries give the best texture.
