Why you’ll love this recipe
All the parts of a chicken Caesar salad, rolled up so you can eat it with one hand. With leftover or rotisserie chicken there is nothing to cook, so it is a realistic weekday lunch.
- About 15 minutes and no stove required.
- High in protein — a generous portion of chicken in every wrap.
- Packs well — slice in half and wrap tightly in parchment.
Keeping wraps crisp
The enemy of any salad wrap is moisture. Use dry romaine — spin or pat it dry after washing — and toss it with only enough dressing to coat the leaves. A thin layer of Parmesan against the tortilla acts as a small barrier between the dressing and the bread. Crushed croutons add crunch without making lumps that tear the tortilla. If you are packing the wraps, chill the chicken first and keep everything cold until lunchtime.

-
Step 1: Prep the chicken
Slice or chop the cooked chicken into bite-size strips. If it is straight from the fridge, it can be used cold, or warmed in the microwave until it reaches 165°F (74°C) if you prefer it hot.
-
Step 2: Dress the salad
In a large bowl, toss the romaine with the Caesar dressing, Parmesan and crushed croutons until the leaves are evenly coated. Season with black pepper and a squeeze of lemon if you like.
Tip: Dress the lettuce right before rolling. Dressed romaine wilts within an hour and makes the tortilla soggy.
-
Step 3: Warm the tortillas
Microwave the tortillas between damp paper towels for 15–20 seconds, or warm each in a dry skillet for 15 seconds per side, so they fold without cracking.
-
Step 4: Fill and roll
Lay a tortilla flat. Pile a quarter of the salad and a quarter of the chicken in the lower third, leaving 2 inches clear on each side. Fold the sides in, then roll up tightly from the bottom.
Tip: Rolling with the seam side down on the board for a minute helps the wrap hold its shape.
-
Step 5: Slice and serve
Cut each wrap in half on a diagonal and serve right away, or wrap tightly in foil or parchment for a packed lunch.
Equipment
- Large mixing bowl
- Cutting board and sharp knife

Tips for the best results
- Crush the croutons slightly so the wrap rolls tightly without tearing the tortilla.
- For packed lunches, keep the dressing in a small container and dress the lettuce just before rolling.
- Spinach or whole-wheat tortillas work well and hold up the same way.
Storage, reheating and freezing
- Refrigerator
- Assembled wraps are best within 4 hours; keep them refrigerated. Store cooked chicken and undressed romaine separately for 3–4 days and assemble as needed.
- Reheating
- Served cold. If you prefer the chicken warm, reheat it to 165°F (74°C) before assembling.
- Freezing
- Not recommended. Romaine and creamy dressing do not survive freezing.
Frequently asked questions
Can I make chicken Caesar wraps the night before?
They are best fresh because the lettuce wilts. For a make-ahead lunch, roll the chicken, Parmesan and undressed lettuce, and pack the dressing separately to drizzle in.
Is store-bought Caesar dressing safe in a packed lunch?
Commercial dressings are made with pasteurized eggs, but the wrap still contains chicken and dairy. Keep it cold with an ice pack and eat it within 2 hours of leaving the fridge.
How do I keep a wrap from falling apart?
Warm the tortilla so it is pliable, do not overfill it, fold the sides in before rolling, and let it rest seam side down for a minute before slicing.
