Why you’ll love this recipe

Quesadillas are the fastest way to turn leftover chicken into something everyone wants to eat. A crisp tortilla, plenty of melted cheese and a little seasoning on the chicken is all it takes.

  • About 15 minutes with already-cooked chicken.
  • Works as lunch, dinner or a snack — cut into wedges for sharing.
  • Easy to customize — add beans, peppers, corn or spinach.

Crisp outside, melted inside

The balance comes from medium heat and patience. At medium the tortilla has time to brown slowly while the heat travels through to melt the cheese and warm the chicken. Spread the filling thin and even; a thick pile of cold chicken stays cool in the middle. If your chicken is straight from the fridge, warm it for 30–60 seconds in the microwave before filling so the center gets hot by the time the outside is golden.

Instructions

Tap a step number to mark it done.

  1. Step 1: Season the chicken

In a bowl, toss the shredded chicken with the chili powder, cumin, garlic powder, salt and salsa until evenly coated. Mix the two cheeses in a separate bowl.

  2. Step 2: Fill the tortillas

Sprinkle a quarter of the cheese over one half of each tortilla, top with a quarter of the chicken and green onions, then a little more cheese. Fold the empty half over and press gently.

Tip: Cheese on both the top and bottom of the filling acts like glue, so the quesadilla holds together when you flip it.

  3. Step 3: Cook until golden

Melt a little of the butter in a 12-inch skillet over medium heat. Cook two folded quesadillas at a time for 2–3 minutes per side, until deep golden and crisp and the cheese is fully melted. The filling should be steaming hot, 165°F (74°C) in the center.

  4. Step 4: Repeat and rest

Transfer to a cutting board and repeat with the remaining butter and quesadillas. Let them rest 1 minute so the cheese sets slightly.

  5. Step 5: Cut and serve

Cut each quesadilla into 3 or 4 wedges and serve with sour cream, guacamole and salsa.

Tips for the best results

  • Keep the heat at medium. Too hot and the tortilla browns before the cheese melts.
  • Shred cheese from a block if you can; it melts more smoothly than pre-shredded.
  • Keep finished quesadillas crisp on a rack in a 200°F (95°C) oven while you cook the rest.

Storage, reheating and freezing

Refrigerator
Refrigerate within 2 hours, wrapped or in an airtight container, for 3–4 days.
Reheating
Reheat in a dry skillet over medium-low heat or in a 375°F (190°C) air fryer for 3–4 minutes until crisp and 165°F (74°C) inside. The microwave works but softens the tortilla.
Freezing
Freeze assembled uncooked quesadillas between sheets of parchment up to 2 months. Cook from frozen over medium-low heat, covered, until heated through to 165°F (74°C).

Frequently asked questions

Should I cook quesadillas with butter or oil?

Either works. Butter gives a richer, more golden crust; a neutral oil is less likely to burn. Use only a thin coat either way.

Can I make chicken quesadillas in the oven for a crowd?

Yes. Brush tortillas lightly with oil, fill and fold, and bake on a sheet pan at 425°F (220°C) for 8–10 minutes, flipping halfway, until golden and melted.

Do I need to cook the chicken first?

Yes. Quesadillas cook only a few minutes, which is not long enough to cook raw chicken safely. Use fully cooked chicken.
