Why you’ll love this recipe
Sloppy joes are one of the simplest dinners you can make from scratch, and the homemade sauce is less sweet and more savory than most canned versions. Everything happens in one skillet in about 25 minutes.
- Pantry ingredients — ketchup, tomato sauce, mustard and Worcestershire.
- Feeds six from 1½ pounds of beef.
- Freezer-friendly filling for a future busy night.
Balancing the sauce
A good sloppy joe sauce balances sweet, sour and savory. Ketchup and brown sugar bring sweetness, mustard and the vinegar in the ketchup bring tang, and Worcestershire adds depth. If the finished filling tastes flat, it usually needs a pinch more salt. If it tastes too sweet, a teaspoon of cider vinegar or extra mustard brings it back into balance.
Simmering uncovered matters too. It reduces the tomato sauce so the filling clings to the beef instead of soaking straight into the bun.

Step 1: Brown the beef and vegetables
Heat a 12-inch skillet over medium-high heat. Add the ground beef, onion and bell pepper with the salt and pepper. Cook 7–9 minutes, breaking up the meat finely, until no pink remains and the beef reaches 160°F (71°C). Add the garlic for the last minute.
Tip: Break the beef into small crumbles with a potato masher or sturdy spatula. Fine crumbles hold onto the sauce and stay on the bun.
-
Step 2: Drain
Tilt the pan and spoon off excess fat, leaving about 1 tablespoon.
-
Step 3: Add the sauce
Stir in the tomato sauce, ketchup, brown sugar, Worcestershire, mustard and chili powder. Bring to a simmer.
-
Step 4: Simmer until thick
Reduce the heat to medium-low and simmer uncovered 8–10 minutes, stirring occasionally, until the sauce is thick enough to mound on a spoon. Taste and adjust the salt.
-
Step 5: Toast the buns and serve
While the filling simmers, butter the cut sides of the buns and toast them in a dry skillet or under the broiler for 1–2 minutes until golden. Spoon the filling onto the bottoms, add pickles if you like, and top.

Tips for the best results
- Dice the onion and pepper small so they soften fully in the short cooking time.
- Toasting the buns keeps them from going soggy under the saucy filling.
- For a crowd, double the recipe and keep it warm in a slow cooker on the WARM setting for up to 2 hours.
Storage, reheating and freezing
- Refrigerator
- Store the filling separately from the buns in an airtight container for 3–4 days. Refrigerate within 2 hours of cooking.
- Reheating
- Reheat in a skillet over medium heat or in the microwave, stirring, until it reaches 165°F (74°C). Add a spoonful of water if it is too thick.
- Freezing
- Freeze the cooled filling (without buns) in freezer bags for up to 3 months. Thaw overnight in the refrigerator before reheating.
Frequently asked questions
How do I keep sloppy joes from being too runny?
Simmer uncovered until the sauce mounds on a spoon. If it still seems loose, give it 2–3 more minutes. It also thickens as it cools slightly.
Can I make sloppy joes in a slow cooker?
Brown and drain the beef first, then cook it with the sauce on LOW for 3–4 hours. Slow cookers do not brown meat or bring it to a safe temperature quickly enough on their own.
Are homemade sloppy joes spicy?
No. One teaspoon of chili powder adds warmth, not heat. Add a pinch of cayenne or a few dashes of hot sauce if you want a kick.
