Instructions

Tap a step number to mark it done.

  1. Step 1: Brown the beef

Heat a Dutch oven over medium-high heat. Add the ground beef and onion and cook, breaking up the meat, 6–8 minutes until browned with no pink remaining. Drain excess fat.

  2. Step 2: Bloom the spices

Stir in the garlic, chili powder, cumin, smoked paprika, oregano and salt. Cook 1 minute until fragrant.

  3. Step 3: Add rice and liquids

Stir in the rinsed rice, tomatoes with their juices, black beans, corn and broth. Bring to a boil, scraping the bottom of the pot.

  4. Step 4: Simmer covered

Reduce the heat to low, cover tightly and simmer 18–20 minutes, until the rice is tender and the liquid is absorbed. Do not lift the lid during the first 15 minutes.

Tip: If the rice is still firm but the pot is dry, add ¼ cup of broth, cover and cook 5 minutes more.

  5. Step 5: Rest and melt the cheese

Take the pot off the heat and let it stand covered 5 minutes. Fluff with a fork, scatter the cheese over the top, cover again and let it melt 2–3 minutes. Serve with toppings.

Tips for the best results

  • Rinsing the rice washes off surface starch so the grains stay separate instead of gummy.
  • Use a pot with a tight lid. If steam escapes, the rice will not cook evenly.
  • For more heat, use hot tomatoes with chiles or add a diced jalapeño with the onion.

Storage, reheating and freezing

Refrigerator
Refrigerate within 2 hours of cooking. Keeps 3–4 days in an airtight container.
Reheating
Add a splash of broth or water and reheat covered in the microwave or on the stove until it reaches 165°F (74°C).
Freezing
Freeze portions for up to 3 months. Thaw overnight in the fridge and reheat with a splash of liquid.

Frequently asked questions

Can I use instant rice?

Not with these liquid amounts. Instant rice needs far less liquid and time, and the dish will turn mushy.

Why is my rice still crunchy?

The heat was too high or the lid let steam escape. Add a little broth, cover tightly and cook on low 5 minutes more.
